What veggies do produce insulin?

For those children with Type 1 diabetes and don't like to eat vegetables and having too much spike in sugar levels, what should be done? What are the veggies that produce insulin and how to make children eat them?

You will want to eat foods high in leucine. Things like chicken, turkey, soy and soy products, low fat cottage cheese, egg whites, several different types of fish, nuts and whole grains. You also want foods high in omega-3 fatty acids. Things like salmon, tuna, sardines, nuts, flaxseeds, and soy.
