This is a super healthy take on a burrito. When I saw this video I couldn't wait to make them. I like that it was wrapped in collard greens instead of a normal tortilla shell. It is very tasty and not that hard to make. There are several steps, but nothing you can't handle.
I thought this was a really great video and a neat concept. I like that the shell is healthier and it looks really good. The only thing is that they looked huge when he rolled them up. I doubt I would be able to eat a whole one.
I like the idea of a healthy burrito. So many of the ones you buy in the store are chocked full of things I can't even pronounce. I will definitely be making this sometime soon. It looks like a really healthy alternative.
