Black Bean Veggie Burgers

You won't believe that there is no meat involved with these tasty burgers. They are easy to prepare and cook.

1 16oz can black beans, drained and rinsed
1 egg
3 cloves garlic, peeled
1/2 green bell pepper, cut into 2 inch pieces
1/2 onion, cut into wedges
1 tablespoon cumin
1 tablespoon chili powder
1 teaspoon hot sauce
1/2 cup bread crumbs

Preheat oven to 375F, and spray non stick oil onto a baking sheet.
Mash black beans in a bowl until thick and pasty.
Finely chop bell pepper, garlic, and onion, and stir into mashed beans.
In another small bowl, stir together egg, cumin, chili powder, and chili sauce.
Put the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Make four patties.
Put patties on baking sheet, and bake 10 minutes on each side.

I have been making veggie burgers for years and like them a lot. This recipe is a little different then what I am used to, but I think I will give it a try. It sounds delicious and it will be perfect for a picnic I have planned this weekend.
