Cranberry Salsa

I absolutely love salsa. Here is a great diabetic cranberry salsa that I think you will fall in love with. It's easy to make and can be ready in about 30 minutes. This is perfect to serve as an appetizer.

1 12 oz bag fresh cranberries
2 tablespoons brandy-based orange liqueur
1/2 cucumber - peeled, seeded, and diced
2 stalks celery, chopped
6 tablespoons white sugar
4 slices pickled jalapeno pepper, finely chopped

Put the cranberries into a food processor, and pulse until finely chopped. Put them in a bowl, and add sugar, orange liqueur, cucumber, celery and jalapeno. Let it sit at room temperature for 15 minutes before serving to blend all the flavors.

Thanks for posting a salsa recipe, I love salsa! This looks like it is really easy to prepare, and most of the ingredients I already have. I am going to give this a try on the weekend and see how everybody likes it.

I would also bet the cranberry juice will turn a funky color like most juices do
